Well to make a long story short we are going to be running around and be in a different town around dinner time every weekday. We can't afford to eat out all those nights and I would like to come up with some creative foods to pack in a cooler. Please give me any ideas you may have, it must be stuff you don't have to warm up. My family is not picky, but we would like healthy foods. We are a family of 4 and have a 3 yr old and 1 1/2 yr old.

So What Happened?

Thanks for all the helpful ideas, I used a lot of them. The kids love bringing the cooler of food and eating at the park. It is almost better than eating at home :)

Hi, Bekka. We LOVE chicken almond sandwiches. Just mix a large can of chicken with about 1/4 c. mayo, a tablespoon of terragon, a little bit of salt, a little bit of pepper, some minced garlic, and as many slivered almonds as you like. This is so easy and tastes just fantastic! Good luck to you and your family!

You can do precooked chicken fingers, not bad cold. if we do a quick picnic we like those. also fixin's for pb&j's. i don't like puting the jelly on the sandwich too soon, i think it makes the bread soggy. butter and cheese sandwiches are one of my kids favorites. pretzels, fish crackers, apples, oranges, banana, carrots, celery, raisons, quaker oats squares are good. dry cereal.small container of peanut butter for dipping of pretzels, carrots or celery. per cooked skinless chicken breast/fingers on bread with mayo/cheese or what you like. cold chicken always seems good.
for easy clean up bring plastic bags from grocery store or gallon zip log bags. i always have a thing of wet wipes in my van and every so often a full roll of paper towels for instances when we are on the go and eat and have to clean up. bring a bottle of water just for clean ups. especially with a 1 1/2 year old..lol
those individual packets of lemonaid or coolaid(sugar free) that you can add to 8-12 oz of water(in sippy) so milk doesn't go bad.
YoGo's or fruit chewy things as a special treat/dessert if they are good or what ever. not sure if a 1 1/2 year old would choke on something round like that. i guess it would depend on how close you watch him/her or if they are prone to choking. my son was.
you can use the chicken in a tortila rollup, bringing cheese and mayo or what ever. or a pita bread. that's healthy.
lunch meat(chicken/turkey) for the rollup or pita pocket.
edamomee(sp) packets. they have these in the freezer section. they will thaw in the cooler or sitting out by the time you want to eat them. my son loves these little packets.
if i think of more i'll let ya know:-))
good luck.. i wouldn't be that brave as you.. lol lol with my two.

We have been in your same shoes. We have taken a cooler full of ice with lunch meats, condiments, cut veggies and some fruit. Of course PB and J are easy as well. One can also make up some salsa dip with chips, crackers etc for snacks and use some closable containers for dips and things or buy some that are predone. I just learned about an easy fruit salad with pudding.Take a can of fruit cocktail add any desirable fruit and then dump in some lemon pudding. It is easy and tastes great on a hot day..

Have you tried to find any recepies on the net. My mom used to pack up cold chicken, whole cantaloupe and other fruits like strawberries or such. You can cook foods the night before and put them in the cooler.

Other than that I don't know how to help you. I'm sorry.

We go camping a lot and my kids love building their own sandwiches. sometimes I'll use a cookie cutter (metal) to cut the bread in shapes and then I just pack into containers different fixin's. Like, turkey, tomatoes, cheese, ham. Or Those individual fruit packs/jello packs are a great serving size. Veggie sticks with a dip. Cheese sticks. the pre-cooked chicken nuggets (my kids aren't always a fan of them cold, but sometimes). We've also done the mac & Cheese things. Barilla has small packets of different flavor that you mix & cook, you could cook ahead...my kids sometimes will ask for our leftovers cold. Spaghetti O's....i'm dating my self to college days. I remember just eatinig those straight from the can. Raman noodles (cooked ahead). you can mix in just about anything you want.

I also just took a taco salad to a family renion. Mixed upon serving. I cooked the meat the night before. then carried it in separate containers until serving. Lettuce, cheese, Kidney beans, meat, western dressing, & chips.
