Dairy-free Pumpkin Pie

My son is on a diet that restricts any dairy. He will be turning 1 a few days before Thanksgiving and we want to be able to have some pumpkin pie as a dessert (just a few bites for baby). Does anyone know of a great, milk-free pumpkin pie recipe? There are lots of options on the web, but I would rather get a recommendation of a tried and true recipe that tastes as close to regular pumpkin pie as possible. Any other milk besides cow or goat's milk is fine (even soy). Thanks for sharing!

I have made it with coconut milk and my family liked it. I also use sugar in the raw and otherwise follow the Libby recipe on the can.

I have made it with coconut milk too, but be sure to use the stuff from the can, not the Silk Coconut Beverage in the carton or Cream of Coconut.

I've made my pumpkin pie (s) with Vanilla Soymilk for years...Honestly, everyone loves it, doesn't know, and I prefer it over milk, as the protein content is higher and it cooks up better. Just substitute 1:1...and follow the directions. You don't need to change a thing.

I would think the coconut would be tasty, but would add that tropical quality, and it does not have the same protein.

And Goats milk - bleck..

I second the coconut milk substitution (full fat version). I use it every year with the regular Libby's recipe. Delish!
