Barbecue Chicken Tacos
Two large Chicken breasts
1/2 jar barbecue sauce
Avocados
tortillas
Monterrey Jack Cheese
Sour Cream
Put chicken in crock pot
pour barbecue sauce over breasts
Add water to cover.
Cook on low for 6 hours, take chicken out and shred, return to crock pot and cook on high for 30 minutes.
Take out and serve on tortillas with remaining ingredients.
Pot Roast
1 pot roast
1 bag baby carrots
1 pkg lipton onion soup mix
2 cans cr of mushroom soup
Put roast in crock pot and sprinkle onion soup mix on top. Pour over cream of mushroom soups and pour carrots on top. Cook for 8 hours on low. (the original recipe only calls for one can of cr of mushroom, but I put in 2 because I like extra to put on mashed potatoes!!)

Thanks so much everyone, and keep them coming!! I tried the Italian Beef Sandwiches with the Pepperocinnis, and they were a HUGE hit!! Definitely going to keep making those!! I can't wait to try the others. Tonight I am making the Chicken Tortilla Soup out of the Fix it And Forget It book for out New Year's Party!! Can't wait!!

Here are 2 favorites:
Italian Beef
4-5 pound chuck roast, sirloin roast - whatever!
2 packets good seasons italian dressing
1 packet au jous seasoning mix
1 bottle beer
1 jar pepporcini peppers with juice
Place roast in crock pot - sprinkle the italian seasoning and au jous mix over as well . Pour the peppers with juice and the beer in - if the meat is not covered - add some water.
Cook on HIGH for 6 hours or on low for 8-10 - remove the meat - shred and put back in the crock pot for 2-4 more hours!! (this is a must! it really makes the recipe!!) - you can start this the night before - then shred it and leave it on low all day the second day.
Serve on crusty rolls!! So good!
Cranberry Pork Loin
1 - 4 pound pork loin roast season with pepper, cinnmaon, onion powder,
make several small slits on roast and insert whole peeled garlic cloves - (I do around 20 - the original recipe calls for 8)
place in crock pot
Sprinkle with 1 pkt of Onion soup mix combined with 1 can whole berry cranberry sauce
cook on low for 6-8 hours. This is so good too!!
Here is another
Italian Beef recipe
1 roast
1 package of onion soup mix
1 C water
2 TBS basil
2 TBS oregano
keep on low for 8 - 10 hours

I'd love some new ones too. I just found out that McCormacks seasonings has a line of crock pct seasonings. On recommendation from a friend, I tried the bbq pulled pork one. It turned out great and my kids have said it is a keeper.
The easiest one I know is for pulled pork sandwiches: Place porkloin in crockpot fat side down and sprinkle with liquid smoke - no need to add any liquid. Cook on high for 4-5 hours or low for 6-8 hours. When done, remove fat, shred with a fork and mix in your favorite BBQ sauce. Then serve on hamburger buns.
My favorite roast recipe uses 1 bottle of italian salad dressing, 1 bottle of peppercini peppers and 1 bottle of beer. It's pretty tangy but good!

Our favorite crockpot recipe tastes wonderful and is super healthy!
We call it "Chicken & Black Beans"
4-5 frozen boneless skinless chicken breasts
1 can or hot sauce (we use the Ariba Medium Spice)
2 cans of black beans (do not drain the cans)
Just put all of this into the crockpot together, cook for 6-8 hours on low and as it cooks down take a spoon or fork and break the chicken up into bite sized pieces. The longer it cooks the more the chicken will just fall apart and become shredded. The juice should absorb by this time and now you just put some tortillas on a plate, add sour cream or some cheddar cheese to the tortilla and wrap up! It's super healthy and yummy! We make it often! Hope you like it!

I don't have specific recipes because I always just put pork tenderloins, roast beef, and fresh turkey breast in mine and then bake potatoes and steam veggies to go with them. I am looking forward to your responses as well.

I know what you mean about using the crock pot in the winter months. There is nothing better then coming home after working all day and having dinner already made. Here is one of my favorites
Taco Soup
1 can Rotel, undrained
1 can stewed tomataoes, undrained
1 can ranch style beans, undrained
1 can pinto beans, undrained
1 can corn, undrained
1 1/2 cups of water
Pour all of these cans and the added water, into the crockpot. Begin cooking on high ( I usually cook this all day long. The longer it cooks, the better it taste)
2 lbs. ground beef, brown and drained
1 4ox can of green chiles
1 onion chopped
2-3 large cloves of garlic, minced
1 Taco seasoning packet
(add the water that the packet tells you to add to the taco mix)
1 Ranch dressing Packet
Saute the meat, chiles, onions and garlic together, until the meat is cooked through and the onions are translucent. Once completely cooked, add the taco seasoning packet and ranch dressing packet to the meat concoction, with the necessary water. Add the meat mixture to the crockpot, cook on high for 6-8 hours.
Serve with chips and hot sauce
sprinkle cheese on top of soup for extra flavor

I've had two successful crockpot recipies lately, one was a pulled pork roast, add 1 cup beef broth, 1/3 cup worchestershire sauce and 1/3 cup hot pepper sauce. Mix liquids and pour over the pork roast in crock pot. Cook on low for 7 or 8 hours, until pork pulls apart easily. Serve on tortillas or buns. I was worried it would be too spicey for my younger daughter, but it wasn't spicey hot at all, just moist and yummy.
The second is the world's easiest recipie! Chuck roast and pace picante sauce (choose your own spice level) place roast in crock pot and pour picante sauce on top. Cook on low for 8 hours, or until roast is fork tender. I planned to pull the roast apart and serve on buns, but my husband and daughter literally stood over the cutting board and ate the beef with their fingers.

I just made Turkey White Chili with my leftovers from Christmas.
5c cooked turkey or chicken
2c chicken stock
2cans Great Northern Beans
1 onion chopped
1 can green chilies (7oz)
1 jalapeno chopped
1T cumin
1T oregano
1t chili powder
2 cloves garlic chopped
Put everything in the crock pot and cook for 5-6 hours. About one hour before it is finished, you can add a can of corn if desired. Serve with various garnishes like cheese, avocado, onion, tomato, etc.
