I would say cash (or paypal). Having worked at a bank in the past I have seen many people out of money trying to deposit counterfeit cashiers checks, money orders and checks. I would think the safest way is by deposit, because there is also conterfeit money out there. When we bought a used car, the man actually met us at his bank. Just don't take any kind of papaer check.
I'm a big fan of paypal. There have been more and more stories about people getting mugged or even injured (killed in one case several months ago) after a large cash craigslist exchange. I would require the payment to clear paypal before they can pickup the car. I would also meet away from my home in a VERY public place. Maybe even discreetly write down or remember the license plate number of the car they show up in. You just never know. We buy and sell a lot on Craigslist. Usually everything is good, but I am currently out $300 for a PS3 that doesn't work and is going to cost $150 to fix and the cell number is no longer in service.
I know I sound a little crazy...just be careful.

We just sold a vehicle on craigslist and the person paid $1500 in cash bc that is what we requested. The person was fine with it. Paypal is a good tool too! Don't take a check forsure!
