So What Happened?

I put 2lbs of corned beef in the crock pot, filled it with 1/2 cup chicken broth and water to cover it, 6 peppercorns, and a bay leaf. I cooked it on low for 10 hours and it came out so tender. I put it in the fridge and later scooped off all the fat, put the corned beef and broth in a pot and boiled it for 45 minutes with carrots, cabbage, and potatoes. It came out great. I will do this for next year.
Thank you for all of your suggestions.

Hi K.,
Unfortunately, I can't find my own recipe right now. But I did get it from allrecipes.com. They're great, I've gotten many yummy recipes there. You can even choose to leave out certain ingredients and it will find recipes with only what you want. Good luck.

No matter how you decide to cook it, add about 1/8th of a cup of white vinegar. My mom shared this with me, it helps to prevent the corned beef from shrinking. It really works! Good luck & Happy St Patti's day!! R.

This was just emailed to me from bettycrocker.com and I thought of your request. I hope it is delicious! A.

2 1/2 pounds medium new potatoes, (about 8), cut in half
2 cups baby-cut carrots
1 cup frozen small whole onions, thawed
1 corned beef brisket (3 to 3 1/2 pounds)
1/8 teaspoon pepper
1/2 cup water
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch
2 tablespoons cold water

1. Mix potatoes, carrots and onions in 4- to 6-quart slow cooker.
2. Thoroughly rinse corned beef; discard seasoning packet. Place beef on vegetables; sprinkle with pepper. Mix 1/2 cup water and the Worcestershire sauce; pour over beef.
3. Cover and cook on low heat setting 8 to 9 hours or until beef and vegetables are tender.
4. Remove beef and vegetables from slow cooker; cover to keep warm. Pour juices from slow cooker into 1-quart saucepan; heat to boiling. Mix cornstarch and cold water until smooth; stir into juices. Cook, stirring constantly, until sauce has thickened. Serve sauce with beef and vegetables.

Hi K., I'm a WestIndian from the Caribbean Islands which is St.Vincent & The grenadines, I love to cook up corn beef and rice together, and if you are making a maccaroni pie you can add a can of corn beef and mix it in with the maccaroni and cheese, and I learn that from my sister in law she's very good at cooking with corn beef it gives the pie a nice flavor and it serves as a filling for the pie. Let me know how u like it.

I've been making this for 35 yrs. ---------- simply pour a can of beer over the corned beef and cook all day in the crockpot. The alcohol cooks off and makes the corned beef cornier. Plus it comes out very very tender! I don't like the spices that comes with the corned beef, so I eliminate those. I cook the cabbage, carrots and potatoes seperately from the meat. Hope you try this and enjoy it. Happy St. Patrick's Day!!!!!!

Make sure you wash the corned beef first. I forgot one time and it was too salty to eat.

Sear it in a hot pan on the stove to seal in juices.5 minutes or so on each side. Then take it and put it in your crockpot with water, salt and pepper add your cabbage and carrots. Just let it cook for the time it needs. It will fall apart. Yummy! Good luck

If you have a big enough crockpot, you can simply put the corned beef, cabbage, carrots and potatoes all in there.. with the seasonings from the corned beef package.. (and some water) and maybe some salt or seasoned salt....and VOILA.... yummy meal :)....This is usually what I do and the flavors from the meat and cabbage season the carrots and potatoes really well.

HAPPY ST. PADDY'S DAY :)
