Magic Cookie bars! It's so easy my almost 4 yo can help me make them.

about 1/2 cup butter
1 1/2 packages of grahm crackers (by packages, I mean the indvidual ones within the box, there are usually three in a box)
1 package of semi-sweet chocolate chips
1 can of sweetened condenced milk

Start with a baking sheet that has edges.

Place the grahm crackers in a sealed baggie. (make sure to get the air out)

Use a rolling pin (or any method you choose) to crush the grahm crackers until there are no big pieces left. Then set aside.

Thickly coat the bottom with butter. (mine takes a little less than 1/2 a cup to coat)

Pour on the grahm crackers making sure they are evenly spread over the butter. (also make sure there is butter underneath the all the grahm crackers - sometimes it can pool in the middle of the pan and not be think enough around the edges)

Sprinkle the chocolate chips over the top.

Pour the sweetened condenced milk evenly over the entire
thing.

Bake at 350 for about 12 minutes or so. You want the milk to have a SLIGHT brown tint to it before you remove them.

Let cool before cutting. After cutting I usually put in the fridge to let the chocolate harded before serving.

I'm so glad you asked this question. I'm going to have to try some of these. If you like Andes mints or the thin mint Girl Scout Cookies, you'll love this. My all time favorite.

You need:
3 sticks of butter
1 1/2 cups brown sugar
2 tablespoons of water
2 cups of choc. chips
2 eggs
2 1/2 cups flour (All Purpose)
1 1/2 teaspoons baking soda
1/2 teaspoon salt
Andes Mints

Heat over to 350. On low heat melt butter, brown sugar, and water in a medium saucepan. Add choc. chips. Stir until almost melted. Pour in large bowl. Cool 10 minutes. Beat eggs in one at a time. Add dry ingredients. Stir until mixed. Chill one hour, covered. Roll into one teaspoon sized balls. Mash down and bake for 10-13 minutes. Make sure to have Andes Mints unwrapped and ready. Place one mint on top of each cookie as soon as it is taken out of the oven. LEt sit 1 minute then spread melted mint with the back of a spoon. Let cool completely. Mint will become hard and cookies may then be stacked. This cookie freezed great and can be made ahead of time.

Hi M.,
Chocolate No Bake cookies are a favorite at my house and easy to make:

3/4 cup margarine
1/4 cup cocoa
1/2 cup milk
2 cups sugar

1 tsp. vanilla
2 and 1/3 cups instant (one minute) oatmeal

Set out a couple of sheets of foil, waxed paper, or parchment paper to set cookies on to harden.

Bring first four ingredients to a boil over medium heat, stirring constantly. Once rolling boil begins, set timer for 4 1/2 minutes and stir constantly. Remove from heat. Add vanilla and then oatmeal. Drop by tablespoonful onto the paper to harden.
If you find that the cookies stay gooey, then you need to boil longer. Also, I have found that teflon coated pots do NOT work well. I use a glass visions pot or metal pot with no bottom coating.
Enjoy!

Here are a couple of really easy and yummy ones!
Ritz peanut butter cookies:
Make peanut butter, Ritz cracker sandwiches and set aside. Melt 1 pkg. Chocolate almond bark on low- add a couple of tablespoons of shortening(butter/oil will not work). Dip the peanut butter crackers into chocolate to cover and set aside to cool on tinfoil. We like to sprinkle them with Christmas sprinkles- very tasty!
We also tried Oreos dipped in the White almond bark this year- also very good, but very sweet too!
Have fun!
Merry Christmas!

You're probably through baking by now but my favorite Christmas cookie is this Fruity Jello cookie. Our tradition is to make one red (pink) batch with strawberry jello and a green with lime. They're a little different and very good!

FRUITY (Jello) COOKIES

4 cups sifted flour
1 tsp. baking powder
1 ½ c. butter
1 cup sugar
1 (3 oz.) pkg. Jello
1 egg
1 tsp. vanilla
(opt.-and I always add: few drops of food coloring)

Sift flour with baking powder. Cream butter (butter should be fairly soft.) Gradually add sugar and gelatin, cream well after each addition. Add egg and vanilla; beat well. Gradually add flour mixture, mixing after each addition until smooth. Force dough through cookie press onto ungreased baking sheets. Sprinkle with gelatin (or colored sugar or sprinkles.) Bake at 350 degrees about 13-14 minutes or until golden brown at edges. Makes about 5 dozen.
