I OWN cookbooks, but I almost never use them. www.allrecipes.com is my very favorite site. I've put so many recipes in my recipe box that are now family favorites that I've lost count.
I am in need of a Good Italian Cookbook and a Caribbean Cookbook(Spanish food)
what are your recommendations??
and also any cookbooks with quick and easy (and different) meals!!

I LOVE my Everyday Italian cookbook by Giada Laurentis. I have some favorite recipes from cookbooks that we put together at MDO and sold for a fundraiser (still use that one).
I find a recipe or 2 that sounds yummy then I tweak it to our specific tastes.
I also love allrecipes.com.
I have given up buying cookbooks anymore because it ends up I only like a few of the recipes and am stuck storing the entire cookbook! So now I google recipes, copy and paste them into a word document (so I can edit if I need to) and then I print it off if its one we all like and I put it in a 3 ring binder. Just a thought for you. I like allrecipes.com too. There is no need to use their paid service.
If you want to see what others like and try new recipes, go to estate sales. Look for the cookbooks that have "greasy" pages. Those are the recipes that family liked best and used the most often.

The BEST italian cookbook I've ever come across, is an italian cookbook (FINALLY in English for under $100... for years it was $100-$150 for the English translation). It's almost as revered as the bible in Italy (where my husband's father's side lives).

For Caribbean (I've just started playing around with them this year...)
Three Guys From Miami Cook Cuban http://icuban.com/food/ (the books links are on the website, but there are a couple dozen sample recipe on the site; hence the link)
The Sugar Mill Caribbean Cookbook by Jinx and Jefferson Morgan is an excellent Caribbean source. I really like that book.
For Italian resources, I like Elizabeth David's books and any by Marcella Hazan and Lidia Bastianich.
M., I can't help you specifically with an Italian or Caribbean cookbook, but I do collect cookbooks, and the ones I always go to for dinner are the Better Homes and Gardens (red checkered) one- it has a mix of all sorts of recipes, is well-organized, has nutrition info for each recipe, shows which ones are fast, easy, low-fat, etc and every recipe I have tried has turned out wonderfully. I also really like Bon Appetit and Bon Appetit: Fast, Easy, Fresh. While the Bon Appetit ones do not have nutrition info, they have thousands of recipes, and they always are absolutely delicious. I also turn to Allrecipes.com a lot of the time; it is nice to have reviews, ratings and tips for each recipe and you can find pretty much any recipe on that site.
I've recently fallen in love with those little cookbooks in the checkout aisle at the grocery store, the one's with the tear out cards... I loooove them :)
I love Memories of a Cuban Kitchen. My favorite recipe is Pollo de Rancho Luna! It's soooo good!!
