Can you guy recommend any good cookbooks, same things are getting pretty boring. Preferably easy, low calorie if those two even exist. My husband is very picky so its hard to get him to try new things but its worth a shot if the recipes are easy enough, tasty & low calorie for everyones sake.

M.,
My family really likes Our Best Bites. You can check out their blog for free, of course, and see if it is food you like. While they do not have a calorie count on the meals, and some are higher calorie, almost everything is made with fresh ingredients and lots of fruits and veggies. Also, everything is EASY and absolutely delicious. I also like that there are photos of each dish.
I collect cookbooks and love to cook. Some of my other favorites are:
Better Homes and Gardens (the red and white plaid one). It has probably well over 500 recipes, is well organized, easy to follow, and has calorie info for each recipe. I have had that cookbook for over 10 years and it is a classic, none of the recipes are duds.
I'd suggest checking out a variety of cookbooks from your local library. You'll have time to try out a few recipes from each and then you can purchase the one you like best.
You can google "easy healthy recipes" and about a million come up. Go through some and copy and paste them into a Word Document. Then if you try it and don't like it, delete it out of your document. Keep the ones you and your family like in a separate document. That way you have your own "cookbook" of family favorites.
Also, I get a ton of cookbooks from Goodwill for $2-4. That way, if you end up not liking much in it, it isn't a big waste of money. Good luck.
I've always been a fan of the "Taste of Home" line of cookbooks. Everything is very homestyle and not too outlandish with hard to find ingredients. You can also get a lot of their recipes online so you can check them out there or borrow their annual cookbooks from your local library.
We have one that is actually called the400-Calorie-Fix-Cookbook. There are great recipes in there for all meals including some dining out options. You can find it on amazon and I am sure other online retail stores. Some of our favorites include Pad Thai, Greek Souvlaki (sp?) sandwiches, and various salads and soups. Oh man, I am so hungry right now!!!
Look at the recipe magazines at the grocery checkout. It gets me out of a slump, they're not as expensive as a cookbook, and there's a lot of variety. I've found some great recipes this way.
