I am a chef and coconut oil is as you say, a beautiful addition to your diet because of its health benefits (but it has to be the exta virgin...) I like to use it in a light dressing for Polynesian salad. 2T extra virgin coconut oil, 2T Extra expeller pressed peanut oil, 2T soysauce, 2T rice vinegar, 1fresh pressed garlic clove. I use this on chopped cabbage and fine shredded bell pepper. Top it with grilled or broiled fish or cold crab(pour it over the crab too.
