Hi,
I have recently been learning all the amazing health benefits of organic, virgin, unrefined coconut oil and would really like to start incorporating it into our everyday diets. (myself, husband, and 4 kiddos) Anyway, I know nut butters are a great way to use the coconut oil (just need a bigger food processor, mine is whimpy) but I was hoping you all might have some other great ideas or recipes to share!

I am a chef and coconut oil is as you say, a beautiful addition to your diet because of its health benefits (but it has to be the exta virgin...) I like to use it in a light dressing for Polynesian salad. 2T extra virgin coconut oil, 2T Extra expeller pressed peanut oil, 2T soysauce, 2T rice vinegar, 1fresh pressed garlic clove. I use this on chopped cabbage and fine shredded bell pepper. Top it with grilled or broiled fish or cold crab(pour it over the crab too. I believe I saw some recipes in "The Maker's Diet" by Jordan Rubin. I haven't tried coconut oil yet, but I know that he highly recommends the stuff. All his other advice has been great, so I trust him on the coconut oil! Just have to actually go and buy some!!! Best wishes!

I used to live in the Philippines and we cooked with Coconut oil for every meal (all stir fries, of course). The people I lived and cooked with were all average pilipinas so I don't know if those educated in the culinary arts would consider that the right thing to do, and I don't know what type of oil it was. But it worked for us. Everyone I knew cooked that way. Might as well try it!

My husband and I throw a tea bag in a cup with a heaping spoonful of organic extra virgin coconut oil and hot water and make a cup of tea. I just woke up and am drinking a cup as I type lol. We do this twice a day. I know that coconut oil can be used as a substitute for butter. Like on veggies, to sautee, on toast, in a smoothie, etc. I would think that used in a salad dressing would be yummy. Best of health to you.

I use organic virgin coconut oil on almost everything. I love to put it on veggies and sautee or grill...Not only do I use it for cooking purposes, but for medicinal. Our pug was always getting ear infections....vets always prescribing antibiotics.....always reocurring. I put a small amount of coconut oil on cotton swab and rubbed in her ear. Must have been about a year ago and NO ear infections since.
My sister has had psoriasis for over 40 years....she is now eating a teaspoon or more a day and said this is the first time that she is seeing it disappear. I can't eat it like that, but I like to put it on oatmeal in the am or in my tea.

I too have recently become interested in coconut oil. I bought a cook book at Sprouts written by a lady from Mesa. The name of the cookbook is Dee's Mighty Cookbook - it has some great recipes using coconut oil and coconut milk. HOpe this helps.
