CHILI CON CARNE (4 servings)
This is a great tasting chili that is very mild, perfect for children too. Ready in 45 minutes and freezes well. Serve with white rice and salad.
3 tablespoons vegetable oil
1 white or yellow onion, chopped finely
1 garlic clove
1 lb ground beef
1 teaspoon chili powder
1 teaspoon flour
1 teaspoon salt
2 tablespoons tomato paste
1 can red kidney beans
Sautee onion and garlic in oil over medium heat. Add ground beef, cook till brown all over. Sprinkle chili powder and flour over beef. Add salt and tomato paste, mix well. Cover and cook over low heat for 15 minutes. Add canned beans and their liquid and cook another 10 minutes, until heated through.
