White Bean Chili
1T. oil/ butter
1 med. onion
1 garlic clove, minced
1t. cumin
2 large chunked chicken breasts
1-16 oz. can white cannelini beans, drained
1-16 oz. can garbanzo beans, drained
1-12 oz package white corn
1-4 oz. cans chopped green chilis
2 chicken bullion cubes
1/4 pound Montgomery Jack cheese, shredded
Cook garlic, cumin and onion in oil until tender then combine with everything plus 1+1/2 cup water. Heat in crock pot, oven or on top of stove. I save the cheese to sprinkle on top.

I've never added tomato sauce, just browned beef, can or 2 of beans (not drained), packet of chili seasoning and chopped tomatoes, if you like spice, rotel (it's chopped tomatoes and peppers). It's good to go.

There are TONS of recipes for "white chili" on www.allrecipes.com - none of them have any tomatoes at all. Not sure if this is what you're looking for, or just no sauce.

just simply substitute beef broth for the tomato products. I have also been known to combine a bottle of beer with a pack of onion soup mix. Either method works...& depends on the crowd I'm feeding.
For my chili, I use a mix of canned beans (unless I have time to precook dried beans the night before)....always using a combo of black, red, kidney, white, & pinto. One large onion, some fresh garlic, diced celery, sometimes I add chopped carrot, & a chopped green pepper (or a variety of colors) to my hamburger as I'm cooking it. I use S&P, garlic powder, & some chili powder for seasoning the meat.
Dump the cooked meat/vegie mix, the beans, the broth, a full jar of chili powder, some cumin, some Italian seasoning, some parsley or cilantro, more S&P and garlic powder, & (depending on the crowd) either a poblano or jalapeno pepper....the smaller the pepper/the hotter.
You can use a crockpot or cook on the stove. Using just the broth will make a thinner/souplike batch of chili, but it's tasty & you can always adjust the "heat" by changing up the pepper mix. Good Luck!

I have a simple recipe that I use, and I adjust a few minor things for my husband's hotter flavor preference. I take 1 pound ground beef, browned, put that in the crockpot with 1 can tomatoes of your preference (I use regular diced tomatoes for the milder version, Hunts Petite diced tomatoes with jalapenos for hotter flavor), 1 can beans (again, depending on your hottness tolerance, either Brooks hot chili beans or regular kidney beans), 2 tblspns chili powder, 2 tblspns chili seasoning (I usually use Williams chili seasoning). For more heat you can add 2tspns Cumin. I usually put this in the crockpot on low for at least 4-5 hours.

I don't add tomato sauce, but I do add canned tomato's, diced, and V8 juice. I use any or all of the following sausage, hamburger, ground turkey, bacon. In pot I simmer diced tomato's, 2 cans juices and all, 2-3 cups V8, 2 cans beans, drained. I like to mix up my beans, black eyed peas, garbanzo beans, kidney beans, dark or light, black beans, ect. I also add a whole onion and a few diced peppers and don't forget the garlic. I like to use red, yellow or orange for color. Spice it how you like. I make a huge pot, usually feeds 8-10 with about two pounds of meat added. If not soupy enough I add a cup of water here and there while simmering. I also add 1/4-1/2 cup of brown sugar at the end. If you like your chili with a little less spice like my husband and I do I use sweet peppers, but the hot ones work as well. Also I use sweet maple bacon and maple sausage along with hamburger or turkey burger... whatever I have on hand.

My husband made this really good chili last weekend. The only tomatoes it has is in the Rotel & there are not many in it.
1# hamburger, 2 cans Rotel, 2 cans chili beans with sauce, 1 jalapeno (seeds removed then cut into quarters), 3 green onions (cut into large chunks), chili seasoning & 4 cups water.
He cooks without a recipe so I'm not sure about how much water, but you can cook it longer to reduce the water if needed.
He put the hamburger in a small stock pot & cooked it with the chili seasoning. After the hamburger was cooked he added everything else & simmered it for 3 hours without the lid. We used regular Rotel, chili seasoning & chili beans with regular sauce. It was good but hot to me, (I had to add ketchup & lots of cheese to tone mine down, but it had really good flavor). To tone it down you can get the Mild Rotel, Mild chili seasoning & chili beans with Mild sauce.

-1 lb. Bob Evans sausage browned, drained well
-1 3/4 C onions, slightly grilled after the sausage is cooked
-1 C drained canned mushrooms
-1 can drained light red kidney beans
-1 can Dierberg's Chile beans
-1 can petite diced tomatoes
-2 cups defrosted frozen corn (frozen corn then defrosted to make 2 C)
-Cholula hot sauce to taste and to flavor!
--Brown and drain the sausage well. After most of the grease is out of the skillet, saute the onions until almost brown tender.
--MEANWHILE, add all other ingredients into the crockpot and stir well. Add your onions when done and stir again. Cook on high covered until it begins to boil and then stir and put on low for about 2 hours, stirring occasionally.
--Makes 9 servings of 1 C each.

I would suggest just making a soup type base...beef broth or boullion cubes. I add a small can of tomato sauce to my chili, but it is basically a beefy broth with chili spices, not usually a strong tomato flavor...??? For mine I use 5 or 6 cans of beans, drained(light red and dark red kidney beans), a can of diced tomatoes, 4 beef boullion cubes, 2 cans of water,garlic, chili powder, and cumin, then add cooked and seasoned hamburger. Not sure if it's the tomato taste you don't like or if someone can't eat tomatoes, but my kids usually pick the little tomato pieces out. My sister cooks her chili 'til it's thick and mushy almost, but I like mine more soupy. There are a million different recipies for chili...no 2 exactly alike...lol.Just experiment and see what you come up with.

Hi FS heres my chili recipe
1 lb hambuger
1 lb saugage
1 tbsp.chili powder
1 tbsp onion powder
1 tbsp cumin
1 tbsp pepper
1 tbsp salt
1 can red kindey beans
1 can pinto beans
1 can chili beans
1 cup of water
put every thing in crock pot and put on low heat . cook your meats first then drain and add to other stuff . its every good!

I just buy the chili seasoning package, brown my hamburger, then mix the pkg. mix in it add diced tomatoes onions, green peppers chili seasoning to your taste an salt an pepper, besides the can of brooks chili beans in their sauce.

I don't have a white chili recipe, if that's what you're looking for, but I'll give you my super-easy slow cooker one!
1 lb Ground beef, browned in pan with garlic and chopped med. yellow onion. Pour into colander and rinse well with hot water (removes as much fat as possible), then add to crock pot.
In crock pot, add:
-2 cans diced tomatoes (you choose if you want seasoned or not: I use with roasted garlic and/or onion, depending on my mood *grin*)
-2 cans Brooks Chili Beans (choose your heat level)
-1 can Chili Magic Traditional Mild (I swear this one makes all the difference)
Set to low and warm all day, if you can, for best flavor. If your more pressed for time, use high for about 2 hours.

I'm sure you've had lots of great responses, as is the custom on this wonderful site! ;-)
My basic chili recipe that I use, especially now with two little ones (5 & 2), involves tomato juice not sauce.
I just brown hamburger (seasoned how you like, we don't use added salt at my house, so it is usually chili, onion, and garlic powder as well as some black pepper, usually about 2-3 lbs, we use the left overs for chili dogs!), add chili beans (yes, I use the canned beans, 3-4 cans just depending on how "beany" you want it), onions (I usually through the onion in while I am browning the hamburger), and then tomato juice to the consistency that you like it. Super easy and always a huge hit with my house!
If you want to get fancier add to it, we used to always have jalepenos in it as well, but children change many things. ;-)
I hope that you find a good recipe, cooking doesn't always have to be difficult to be good!

I brown my hamburger, add chili beans(I use mild) and stewed tomatoes, add a little chili powder and a little cumadin. I also rinse my cans with enough water to get the juices out and that's all I use!! My family love it, I make a big pot using 4 cans of chili beans and 2 cans of tomatoes.
