Anyone have a good and easy pot pie recipe that does NOT use icky condensed soup?!

Thanks everyone for the suggestions! I'm looking forward to trying them out on my family...without the msg or preservatives and who knows what else in the condensed soup!

I just take a pie crust, dump in a can of Veg All, a jar of chicken or turkey gravy and a can of chicken chunks (drained) or cook chicken and shred into pie crust and then bake.

Hi J.:

I have 2 recipes for you....both great.

In her cookbook, she actually substitutes the crust with biscuits which eliminates the need to make a crust. YIPPEE! To elaborate, make the filling as directed, put into a glass baking dish and place refrigerated biscuits on the top. Cook according to the biscuit temperature and time listed on the package. (She of course makes the biscuits from scratch....I use the pillsbury package. :-))Her way might taste better but I have a 4 month old and that has curbed the amount of time I can spend cooking. :-)

Melt 4.T butter add 4T. flour over medium low heat. Add 1 cup chicken broth and 1 cup milk or 1/2 and 1/2. Add your cooked chicken and cooked veggies. I used frozen veggies that have been cooked in the microwave (or over the stove). Preheat oven to 425. Use your favorite pastry dough and bake for 35 minutes or make or buy biscuits and put on top and bake until golden brown 15-20 minutes. Good luck.

I too, use the Betty Crocker recipie. Instead of making a pie crust, I use the pre-made rolled up ones. I will also use a baga of frozen mixed vegs. instead of just peas and carrots. I don't even cook them. Just make the sauce and add chicken and veggies. The sauce is hot so it melts the veggies enough. Baking it makes it all bubbly and delicious. Let it sit a few minutes before cutting it. My family gobbles this up. Works well with turkey too!

i'll tell you what grab a can of veg all get a cream of potato soup yes in the can. cook 3 chicken breast let cool shread with a fork and pillsbury pie crust the veg all has the recipe on the can.. I have never had anyone eat this without asking how to make it . give it a try your kids will love it . i also cook it in a 9 inch round cake pan cook the bottom by itself for 10 min then add the rest be sure to cut a few holes in the top crust. you can cook the chicken the night before.BTW i hate icky can soup recipes also but not this one. Oh you can also add some corn i do for my hubby

I agree with you regarding the icky condensed soup.
I always use the Betty Crocker recipe. Everyone loves it! I use whatever frozen vegie mix and sometimes I'll add some potatoe.

THIS IS SO EASY:

I get pre-made refrigerated pie crust.

One bag of frozen vegies - your choice.

One pre-baked whole chicken - the kind you find hot and ready to take home in the deli section at the grocery store.

= = = = =

Put one pie crust in a pie pan. Take all chicken off bone and place on top of pie crust. Cook vegies in microwave, then drain and place on top of chicken.

Make a homemade white sauce. I do this by making a "light" roux in a pan, then adding chicken broth and half and half or a little cream.

Spice the sauce heavily with salt and pepper. For an additional spice, I sometimes choose sage.

While still warm, pour all of this over the chicken/vegie combo, then top with the other pie crust.

Bake until golden brown. For a special touch, brush with an egg white wash before baking.

Takes 30 minutes or less.

VOILA!!! EASY AND DELICIOUS!

Just make a white sauce instead of the soup..then add the veggies and chicken..
