hi P.,
here is one you dont have to bake and you can make it in like 6 min :) taste awesome its my hubbys favorite
1 pkg of philadelphia cream cheese
1 can of sweetened condensed milk
1/4 cup of lemon juice
1 tsp of vanilla
soften cream cheese in the microwave 30 seconds or 1 min should be enough then add in all the ingredients mix well you dont have to use a mixer a spoon is all you need. put it in a graham cracker crust and tada let it set for a few hrs and then you may top it with cherry pie filling or any topping you like the best thing is no baking and taste awesome

I saw this one on Rachel Ray 30 minute meals and it is no bake and the BEST cheesecake!

12 ounces softened cream cheese, 1 1/2 (8-ounce) bricks
2/3 cup sour cream
1 cup confectioners' sugar
1 teaspoon vanilla extract
6 individual gram cracker crusts, available on baking aisle

Add cream cheese, sour cream, confectioners' sugar, vanilla extract and process until smooth. Using a rubber spatula, fill pie tins.

You can put strawberris on top!

I have an entire book dedicated to cheesecakes from Philidelphia Creamcheese. Is there anything in particular he likes- Black Forest, Pumpkin, Strawberry, etc.?

Here is a recipe for a plain cheesecake that can be dressed up if you want. I made it once and evreybody loved it.

1 graham cracker pie crust (either store bought or make your own with crumbs and butter)
2 pkgs (8oz) of cream cheese
1 can of condensed milk
3 eggs
1/4 cup lemon juice (you can use juice from concentrate, or fresh)

1.Preheat oven to 300F.
2.Beat cream cheese with a mixer until fluffy. Slowly beat in condensed milk until smooth. Add eggs and lemon juice, mix well.
3. Pour into the crust. Bake 50-55 min until center is set.
4. Cool 1 hour before putting in the fridge. Chill at least 4 hrs before eating.

The recipe recommends putting cherry or raspberry sauce on top, but my hubby thought that chocolate topping would be great too. Melted choc chips would do, or one of those ice cream toppings.

Enjoy!
