Great question....
I grew up with cast iron skillets and have ruined a few over the years - my fault, b/c I did not dry thoroughly, or my clueless husband let it soak over night.

If you need to save money, then search a couple of thrift stores and flea markets. Also, camping stores carry cast iron.

Great post and I was informed with the answers. Good move on the teflon- The sooner you get rid of it the better. It isn't good for anyone!
I use cast iron- grew up on it, but I never actually bought any new- I usually just pick them up where ever I see them, flea markets, auctions, thrift stores, etc. I saw that Cabelas has a great selection if you have one in your area. Not sure of the brand!

Lodge brand has been rated best by America's Test Kitchen. I've seen them in Target, among other places. I can't speak from experience yet, but I'm planning to get some after my kitchen is done being remodeled at the end of the month!

As other posters said, Lodge is great. I haven't used tephon in years. I do have a pan but I only use it when I need to panfry a lot of potatoes for company and the cast iron is not big enough. When you get a new pan, I reccomend that you cook with it for a couple week with food that doesn't stick. Frying stuff is the best. But you can also sautee veggies. No omlettes! The pan takes time to "season" meaning that it developes an nonstick surface. Do not put them in the dishwasher and use mild dish soap and water. Dry them before putting them away or the water will rust them.

Lodge. You can them pre-seasoned just about anywhere.

We're lucky to live in a city that made Griswold cast ironware. I pick mine up at flea markets and second hand stores, as well as having inherited a set from my mother after they became to heavy for her to handle properly. I use them for everything!

We use Lodge. Just got into them this past year. And yes as with any type of quality cooking, it takes practice! Good eating to you!

I too use lodge. I have three circular pans and a square one. We love them!
