I don't think that I have ever seen this on here. . . . I love to cook, but am losing inspiration. Maybe it's the heat. Do you have a favorite recipe that you might be willing to share?

Here is one of my favorite salad recipes:
mixed greens, chicken, red onion, avocado, blue cheese, candied pecans, and apple chips tossed together with white balsamic dressing.

I signed up with allrecipes.com and they send me a recipe of the day. It gets me motivated to try new things. One of my all time no-fail favorites.....

Chicken ravioli bake

4 Chicken breast cooked and shredded
Package frozen raviolis
Frozen broccoli
Jar alfredo sauce
Shredded cheese
Salt, pepper, garlic

Boil the raviolis for 5 minutes and drain. I get a rotisserie chicken and shred it up. Mix all the ingredients and bake in a 9x13 for 20 minutes at 350.

Black Bean Soup

3 cans of black beans
1 can crushed tomatoes
1 can corn (drained)
1 can crushed green chili peppers (mild)
one onion - cut up
handful of baby carrots - cut up
2 to 3 tablespoons of olive oil

Heat olive oil, add cut up onion and carrot, cook until softened. Add rest of ingredients. Simmer for one hour or more (the longer you cook it the thicker it will become). Serve with sour cream, grated cheddar cheese and tortilla chips. Add cumin for more of a chili taste.

My kids LOVE this and ask for it! It doesn't last more than one meal either.

Great idea!! I've been really into cooking until I got pregnant. Now I can't decide what to make.

This one is easy and delicious:

Fiesta Chicken
- 4 - 6 skinless, boneless chicken breasts
- 1 can black beans
- 1 can of corn
- 1 jar of your favorite salsa
- 1 cup shreaded cheddar cheese

Combine chicken, beans, corn and salsa into a slow-cooker and cook on low for 6-8 hours or high for 4-6. Serve with cheddar cheese sprinkled on top. (This can be adapted for the oven...just cook until the chicken is done.)

Great idea! I am low on brain cells lately and could use the ideas too! I don't know if you are interested in this type of recipe, but I eat this for lunch all the time and everyone who i have ever made it for LOVES it! You can make them for dinner too, but they are great for lunch because it is easy to make just one...

Mediterranean Veggie Burrito

1 Dr. Prager's California Veggie Burger Patty (You have to use this brand, any others will not be the same. They sell them at Trader Joe's, Whole Foods and some regular grocery stores)
1 Flour Tortilla (or try a pita pocket for variety)
1 ounce marinated mozzarella cheese (I prefer the sun-dried tomato one from TJ's)
2 tbs garlic flavored hummus
1 small tomato, diced

First spray a small skillet with cooking spray and heat the veggie burger on high heat until soft. Next, chop-up the patty in the pan and make sure the insides are heated. Toss the heated patty pieces onto a tortilla with the sliced or grated cheese. Microwave for about 30 seconds. Remove from microwave and top with hummus and tomatoes. Finally, wrap-up your burrito and enjoy! Yum-yummy!

i got this recipe from a friend and my 2 year old loves it.

taco bake

make 2 boxes of mac'n'cheese, add either home made steamed sweet potato or 1 jar of jarred baby food sweet potato (carrots work too), mix in some shredded cheese and sour cream set aside
brown 1 lb of ground lean beef, ground turkey or ground chicken and add taco seasoning, corn any any other kind of vegi your kids like, i dice up zucchini sometimes, onion, garlic, carrots
you can either layer the noodles and meat, or mix it all together in a casserole dish, put shredded cheese and some salsa on top and brown in the oven, 375 for 20-30 mins

here's on for you & thanks I'll use the salad recipe....
This is called "my favorite chicken" cuz it's ALL my kids favorite. They ALL ask me to make it for thier birthday's etc....it's not the healthiest but can be modified (which I have done & don't tell, no one noticed)....

My Favorite Chicken:
4 Boneless/Skinless Chicken breasts
1 Cup Mayo/or light mayo
2 Tbsp mustard (plain is fine but brown mustard is better)
2-3 Cups bread crumbs (store bought is ok too)
1/4 Cup parmasean cheese

Preheat oven 425 degree's. In bowl, mix together mayo, parmasean & mustard. Brush mustard sauce on chicken coat well. Roll chicken in bread crumbs,completely coat.
Spray olive oil or Pam on a cookie sheet. Place chicken on cookie sheet. Bake @ 425 for 20-25 minutes, till brown & cooked thru.
Serve with sauce....(leftover sauce, only if very careful when putting on chicken, or make a seperate sauce for dipping...less chance of contamination)
Serve chicken w/sauce to dip....
Real easy, takes no time,but a little messy. Add a salad & bread or a side dish... Enjoy....
Your salad is something I do but instead of blue cheese, I use Feta...instead of apple chips try dried cranberries, and instead of pecans I use almonds.....other than that...lol

easy decadent fruit bars

Add 3/4 c melted butter and 2 c oatmeal to a yellow cake mix. After mixed, take half the mixture and press intoa pam greased oblong pan. Spread a nice layer of rasperry or apricot jam on top. Sprinkle reamaining cake mixture on top. Bake 350 for 20-30 mins (lightly browned). Cool. cut into squares. can dust with powder sugar or put a ribbon piping of white vanilla frosting on them, but these are already very sweet.

Here are a couple that use leftover meat since in our house we don't eat a whole chicken, etc. in one meal. :o)

For leftover bbq steak/tri-tip, etc.:

Left over meat
Zucchini or yellow squash
Angel Hair pasta
Chopped fresh tomato
Greek Seasoning
Lemon

Boil Angel Hair pasta (I like Barilla Plus in the yellow box) for about 5 mins. While that is boiling...
In a large frying pan saute sliced zucchini (and/or yellow squash) in a little olive oil and Greek Seasoning.
When pasta and zucchini are ready, add the leftover meat (cut bite-sized), drained pasta, and chopped tomoato to the zucchini pan. Stir it up and heat through for 1-2 minutes. Squeeze lemon over and serve. 10 minute dinner!

For leftover chicken:

Cooked Chicken cut bite-sized
Cooked Brown long grain rice (I always make a full rice cooker of this so I have cooked rice in the freezer at all times. 60 to 90 seconds in the microwave and it's ready to go!)
Frozen corn
Chopped red bell pepper (or not as you like!)
Taco seasoning
Sour Cream
Shredded cheese

In a large frying pan heat frozen corn and chicken. When heated through add the hot cooked rice, bell peppers, and taco seasoning. Stir it up and serve with sour cream and cheese on top. This is inhaled at our house! My hubby likes it with jalapenos and avocado on top as well, but that is optional. My kids call it Chicken Taco Rice.

ohhh I have a new one

layer in a baking dish and bake at 350 for about 45 minutes

chicken, boneless, skinless breasts or thighs
topped with sliced swiss cheese
covered with 1 can cream of celery or mushroom soup,
topped with one box of stuffing mix or croutons...so yummy!!1

Another great website is Recipezaar.com you can look up recipes by ingredient there, which is great when you want to use up pantry items, but aren't sure what to make.

A few of my family's favorites are:
Chicken Perlo (or Chicken, Sausage, and Rice)
In a large pot, bring to boil about 6 cups of chicken broth, add chicken and cover till cooked through. Remove chicken and shred.
While shredding chicken add 2 1/2 cups rice (more or less depending on how much water you think has evaporated while cooking chicken) Make sure heat is low, cover and let sit for 20 minutes.
I use box of brown and serve sausage links. Cut into small chunks, heat in microwave until heated through.
Once rice is done, add shredded chicken and sausage and stir. I usually season with salt, pepper, and parsley.
This makes a lot, but the amount is easily changed to what suits your family.

I also use my crockpot a lot, especially to cook up a whole chicken that I will shred while still warm to use in multiple recipes, including the one above. I will also use the chicken for a quick chicken and dumplings, chicken enchiladas or tacos.

I'n also going to use your salad recipe... sounds yummy. Here's one of my favorites, which makes a lot, so you can freeze several containers for other dinners. All the quantities in the recipe can be adjusted to your taste.

Pork and Green Chile Stew

Cut up several pounds of country-style pork ribs into about 2x2 pieces. (You can also use a big hunk of pork shoulder, cut up and trimmed of the biggest pieces of fat.)
Brown these pieces on all sides in a dutch oven in a little canola oil, and season them with salt and pepper. Add six or more cloves of minced garlic, and stir them around with the meat until they are fragrant. Then add about a cup of chicken broth, a big can of green chiles, cut in about 1x1 pieces, a big can of crushed tomatos, and 2 small cans of corn kernels. Simmer this for about an hour and a half, then strain as much fat off the surface as you can. Add several teaspoons of cumin, to taste, a little cayenne pepper, and salt, if you need it, and simmer about ten minutes more. Serve it over hot rice, preferably basmati, the best rice in the world. (No kidding!)

One of my favorites is Taco Salad.....

brown your meat, drain the grease, add a can of kidney beans and turn to low.

In a bowl shred your lettuce, add chopped tomatoes, chopped red onion, a can of sliced olives, and some shredded cheddar cheese.

for the dressing you use equal parts of sour cream, mayo, and la victoria mild green taco sauce.

add the meat and dressing to your salad and toss. Serve on top of a bed of DORITOS nacho cheese chips and ejoy! Quick, easy and doesn't heat up the kitchen too much!

You could also add some avacados to it if you like them!

Great Idea T. B!
The Pasta Salad my family brings to many functions for our daughter's competitive softball team and to church is very simple.
3 Color Rotini cooked to al dente, rinsed and cooled
then add the following veggies:
1/2 to 1 red onion cut in half and sliced
1/1 to 1 green and red bell pepper cored and sliced
2 carrots sliced, cooked and cooled
1/2 to 1 cucumber quartered and sliced
1 can red kidney beans, rinsed and drained
2 jars marinated artochoke hearts, chopped (reserve marinade)
1 small can sliced olives
smoked sausage sliced (optional)
cheese cubes (optional)
about a half of a bottle of your favorite Fat Free Italian Salad Dressing and reserved artichoke marinade.
Mix this all together with some garlic and/or seasoned salt and pepper and you have a happy bunch of eaters!

I grill a lot outside due to the heat. I refuse to use the oven so I grill chicken (which you can use for fajitas or tacos) or steak. I also use my slow cooker (that is a saving grace w/a newborn). I make tacos, taco salad, pasta w/chicken, spaghetti etc. All easy but I love these because they are quick and I don't have to use the oven. The taco salad is easy because all I do is brown the beef with taco mix then add to lettuce, kidney beans, corn, tortilla chips, tomatoes, onions, cheese and thousand island dressing. I grill steak and put it on lettuce (the pre-bagged kind) with red onions, tomatoes and avocados. I try to have a baguette of bread on hand to serve with dinner or to make grilled steak/chicken sandwiches. The pre-made tortellini in the refrigerated section is great when you add alfredo sauce & mozzerella cheese With the tacos, I just brown ground beef, add the taco mix for flavor and serve with Rice a Roni Spanish Rice or refried beans. Grilled chicken with a side of black beans mixed with corn, red onion and tomatoes. I serve the grilled steak with homemade mashed potatoes (very quick 20 mins on the stovetop). I hope this help.
