Can You Freeze Thanksgiving Sides for Christmas?

We have the same meal for Thanksgiving and Christmas. I usually make a smaller portion of each side because it's just the 3 of us eating. This year I was wondering if I could make a bigger serving of green bean casserole and stuffing and freeze it for Christmas, or will it not last that long?

I would think the stuffing would be fine, but the green beans might get a bit mushy. If I recall, the recipe has you bake it for a bit, add fried onions on top and then bake some more. I would do 2 small pans, do the first bake for the one you want to save for Christmas, then freeze and when you take it out put it back in the oven to warm it and then add the onions and do the second bake. It might save you a bit of time and you won't have to bother with splitting a can of mushroom soup to make a smaller batch.

I have successfully frozen mashed potatoes and homemade cranberry sauce and homemade rolls.

Ditto Sarah, the green beans will be mushy. The stuffing will be off.

You can do both. With the green bean casserole, prepare as you would for cooking and just freeze it without the onions on top. For the dressing, you can cook or not and freeze. Thaw in the fridge the day before.

I haven't yet been in charge of the holiday meal, but I know my mom has made extra dressing and frozen it BEFORE cooking.
