Thank you to everyone for the great advice about camping. I'm currently looking for some sites this summer. Now I would love some great and easy recipes to make while we are out camping. Things the kids will eat and also maybe help prepare would be great but also just fun stuff you can cook over a camp stove or fire pit. I've heard of a camp cake but I don't know how to make it. Please let me know if you have any wonderful ideas.

Can't help you with the camp cake, but my suggestion is to take things that are easy to prepare (less than 3 ingredients) or are pre-made/pre-mixed. I also have a camping kit I put together at Walmart-basic spices, pots, pans, plastic dishes, cheap utensils, can opener, spatulas, paper towels, cleaning supplies (for dishes), trash bags, & a cleaning tub for dishes.
As for recipies, carne asada or fajitas are good if you mix everything at home, once cooked, just throw it in a tortilla & cook up a can of beans.
I also take instant mashed potatoes & a can of green beans or corn to go with steak or chicken.
For breakfast look into the instapour pancakes with eggs & bacon. We also do chorizo & eggs with a side of potatoes.
For lunch, you can keep it simple & do sandwiches or hotdogs.
I really try to not let camping get in the way of food options.

Oh & my recommendation for camping (from your last thread) is Carpinteria State Beach (just south of Santa Barbra), it's right on the beach, but in a small town so it feel like you're getting away.

I love preparing meals while camping, but I also like an easy cleanup! One night I prepared a meal in one of the tinfoil bags you can purchase at most any grocery store. I put chicken breasts, cut up red potatoes, some fresh green beans and a can of cream of chicken soup in the bag. Sealed it up and threw it on the grate over a campfire. Flip it a few times while cooking. Mine cooked for around 30 minutes. It was delicious and easy!

We used to camp all the time when I was a kid, so here are some of the meals I remember well:

"Camper's Doughnuts": you will need a camp stove, oil and a pan for frying, a roll of refrigerator biscuts, canned frosting and sprinkles and/or powdered sugar and jelly. Heat oil. With thumbs, push hole in center of each biscut, then drop into hot oil. Cook until both sides are golden brown, flipping once. (About 2-4 minutes per side.) Drain cooked doughtnuts on paper towels until cool enough to handle. Let kids "decorate" their own doughnuts how they like. (This was a family favorite! HANDS DOWN!! But, to keep it special, Mom would not make it at home... EVER! :()

"Chili Mac": Make mac and cheese according to package directions, then stir in 1-2 can of your favorite chili per box of mac and cheese. (can also do plain spaghetti noodles instead of mac and cheese.)

"Campfire Hot dog roast": I think we have ALL done this!

"(Boneless) Chicken or Fish Packets": You will need a campfire grill (fits in fire pit for BBQing of the the open flame), foil, meat of choice, seasonings for meat, and a few veggies (onion, baby carrots, zucchini...) Put grill in fire pit and light fire. Season meat and place on sheet of foil. On top of meat place a few veggies. Fold foil tightly to create "packets". (If making diffent types, use a sharpy to indicate which is which.) Place on grill for about 10-15 minutes for chicken, 7-10 for fish. Put on plates and ADULTS open carefully, because the packets will be full of steam.

Sandwiches are also a great "stand-by" lunch. PB&J or cold cuts- but if using mayo be sure to keep PLENTY of ice.

Hambergers can be made on the campfire grill as well.

We go camping and I would be lost without my dutch oven! You can get them at camping or sporting good stores. Put the ingredients in and leave it alone-kind of like an outdoor crockpot. They will also come with a cookbook or you can buy other ones. You can make a box cake mix or brownies in them (a nice treat when you're roughing it).

Our family favorite in the dutch oven is enchiladas. I layer tortillas, precooked meat, sauce in cheese to the top, cover and let cook till everything is warmed through-about 30 minutes.

The kids also like to cook pigs in a blanket on a stick over the open fire. Sausage (precooked) goes on the stick and wrap a biscuit around it. Cook until golden brown.

If you can precook and pre chop anything at home, it will save so much time. You can purchase special hot dog cooking wticks that are long enough for kids to use at a safe distance from the fire. Don't ever leave the kids cooking around alone though.

I googled "camp food" and a ton of sites came up! Some memorable treats were:
"Snakes"
Get a green stick or roasting rod and wrap pilsbury biscuit dough around the stick and roast it until golden brown and then slide them off and enjoy.
"Banana Boat"
Cut a slit into your banana peel (careful not to cut all the way through) to make a pocket. Stuff the pocket with chocolate chips, peanutbutter chips, chopped nuts, coconut, mini marshmallows, etc. Wrap in foil and put in the coals for about 10 min. When you open it up it's a gooey delectable treat.
"Taco Joe"
Basically a tostada. Scramble up beef or turkey in your skillet. Lay down a bed of tortilla chips and top with the meat and goodies that you already chopped at home: tomatos, cheese, lettuce, corn, onions, chiles, maybe some sour cream, etc. Yum!
"Country scramble"
An egg scramble using up the last of the toppings from the previous night's "Taco Joe"!
