So my son has around 22 foods he is allergic to. I am having a hard time finding substitutes for Butter when it is called for in a recipe.
We have to avoid all dairy and olive oil ( as this is made with green olives and he tested allergic to those).
The vegan butters I have looked at all seem to contain olive oil as a main ingredient and all the margarines I have looked at seem to have milk proteins.
Do any of you Mama's have any recommendations for the substitute. Baking season is upon us and I usually have to make special snacks for my son for his daycare class parties...I know he gets tired of the three fruits he can eat ( grapes, apples and bananas) as his special snack, especially when all the other kids are eating cakes, cookies or other fruits that he is allergic to.
I want to find something so i can bake him his own special fun snacks and share them.

Organic refined Coconut oil. You can get it either at a vitamin shoppe, health food store (sprouts) or some grocery stores have it. I use it in place of butter because it is great for baking (you use same amount of the oil as you would butter). If you get the unrefined oil it will taste like coconut, which some people don't mind. But I even cook eggs with this oil and I don't want coconut flavor with my eggs. :)
Please don't use Smart Balance or Crisco. Crisco is hydrogenated oils which is trans-fat! And Smart Balance usually is processed and therefor full of chemicals.
Also, canola oil is a unsaturated fat which will spoil if it is cooked, so this is not a good choice to use for anything except making salad dressings or mayo. Unsaturated fats become rancid when cooked at too high of a temperature, which will cause inflammation in arteries.
I use canola oil for my main oil, but for baking, I think you might be able to try applesauce. (Not sure if I am remembering that correctly, as I am not a baker myself.)
Applesauce is correct. You can use applesauce as a butter substitute.
I had some chocolate chip cookies made with applesauce instead of any kind of butter or oil and they were TASTY!!!
I'm guessing he's allergic to just about all nuts and soy.... Let me think. I might be able to come up with a recipe. I bake all the time, but rarely deal with allergy issues.
smart balance light is dairy free. Check the label on the other smart balances sticks for baking, not entirely sure about those. Could you substitute coconut milk yogurt? I have a really good pumpkin bread recipe that uses coconut milk. I'll try to find it. Message me if you're interested. Also, look for the Parve sign on things. that means dairy free. Good luck. Allergies stink!
canola oil is good fats like olive oil so you can use that. also, applesauce is a popular substitute. i tried this myself when trying to make healthier muffins for my son and it worked!

I agree with substituting apple sauce for butter in some foods. Also, you are not going to believe this, but you can use a whole avocado in place of butter for baking.
Is he allergic to nuts? I have used cashew milk for baking and making soups and casseroles, and I would be happy to send you the recipe if you think you could use it.
Butter flavored Crisco... It's vegetable oil.
You can use Flaxseed Oil as a replacement (if he is not allergic to it, that is).

My nephew is severely allergic to dairy & I believe my SIL uses Smart Balance Light. Just read the label to be sure, but I'm almost positive that's the right one.
"Best Life Buttery Spread" contains soybean and palm oils, but does not list olive oil as an ingredient. It is definitely 100% free of all dairy and milk proteins, since my son cannot have any dairy at all.
We also often use Nucoa brand. I don't have any in the house right now though so I can't check the package. I can guarantee it's vegan, but don't know about the olive oil.
