I left a big bag if shredded cheddar on the counter from about 9pm last night, to 6:30am this morning. I am down South,so it is warm here, but we keep our house at 70 degrees overnight. I think it should still be good, but I am not sure, is it ok to eat?? Thx mamas!

I would eat it. If it doesn't have mold on it - or smells funky - it's fine.
Heck on blocks of cheese - I just cut the mold off and eat the cheese...never have had a problem with that!!
use it on an omelet or scrambled egg!!

The worst that can happen is it melting or molding.
Melt = no worries
Mold = totally obvious, and also no worries (though it changed the taste).
Cheese is "preserved milk". As in, before cutting, its designed to be kept at room temp for several years. After cutting, it either dries out or starts culturing more mold. Which is harmless. Notice the "more" part. The mild cheese grows is from the cultures in the cheese which give it its character. Some cheeses are intentionally encourage to grow extra mold (bleu, for example).
Now there ARE some "fresh" cheese... Which have not been preserved. Fresh mozz v mozz. Fresh mozz will go bad, regular mozz won't.
It's probably fine. Europeans do not refrigerate their cheese normally.
I have done that more than once and we still ate it. It's fine. :)
I would eat it. Especially if the cheese stands alone.
It won't be moldy after O. night.
