Hi!
I'm planning a birthday brunch for my mother-in-law on Sunday and other than having a quiche, I'm stumped for ideas! (There will be 10 people) Any great brunch recipes/ideas would be greatly appreciated! :) Thanks!

Breakfast casseroles are always a hit. Try www.allrecipes.com for some good recipes. They are all rated, so you will know if they are good ones.
Other things I've had at brunch: coffee cake, mixed fruit, mimosas (OJ and champagne). For lunch type stuff: cheese and crackers, Ham and rolls, mostacolli or pasta salad.

Also, something that is very easy that my mom and I always get requests for is the following:
1 pkg cream cheese
1 pkg ground sausage (like Jimmy Deans in the breakfast sausage area)
1 pkg crescent rolls
Brown the sausage. Mix with the cream cheese till creamy. Roll out the crescent rolls flat. Put the mixture in the center of the crescent rolls. Pull together in pinch down the center and fold in the sides. Bake at about 350 degrees until browned on top. Let cool and cut in slices.

One of my sisters friends made what i thought were the coolest easiest things. she had different ingredients that she'd made up the night before in ziplocs.. chopped onions, green red yellow peppers, shredded cheeses, bacon (you can buy it already cooked and crumbled too), little ham pieces, mushrooms...

she had made up a big tupperware bowl of scrambled eggs ready to be cooked then she used her mini muffin pans and a little ladle. she spooned some egg into each cup then threw in whatever ingredients she wanted for each one.

voila, a bunch of different little bite sized omelets in ten minutes (baked at 350). it was so easy and so neat to have all different kinds to choose from.

I made these muffins last week and they were so good. I then gave the recipe to a friend and she took them on a breakfast picnic her family had. Everyone raved over them!

Easy Applesauce Muffins

6 T margarine, melted
3/4 C ww flour
3/4 C all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2/3 C sugar
1 1/2 C chuncky applesauce (or not chuncky applesauce!)

Heat oven to 375 and line or spray muffin tins. Melt margarine in microwave and then add to the applesauce. Set aside. Combine all the dry ingredients and mix well. Then add the applesauce/margarine mix. Spoon into muffin tins. Bake for 20 minutes. Makes 10 muffins.

I always take an egg-bake. It is REALLY easy, you make it the night before and everyone loves it! Just grease a 9 x 13 inch glass dish, put some frozen, shredded,hash browns on the bottom (I use somewhere between a half and a whole bag), then put any kind of shreeded cheese you want, and any meats, veggies, or spices you want, on top of the hash browns (of course pre-cook any meats/veggies, if I want to make it really easy I use the diced ham pieces from the grocery store.) Then blend somewhere between 12 and 18 eggs with approximately a cup of milk, salt and pepper. Pour this on top of the hash browns and top with any extra cheese, meats, etc... you wish. Cover and put in the refrigerator overnight. In the morning uncover and bake at 350 for somewhere between 45 minutes and an hour. Good luck!

Brunch is my FAVORITE meal to make for company and one thing that I always get compliments on are my fruit parfaits. In wine glasses layer vanilla yogurt, fresh berries and granola (I found that the Meijer's brand is the best). Top with Cool Whip if you'd like. I also garnish the glass with a strawberry and a piece of fresh mint. Good luck!

Fruit salsa served with cinnamon pita chips or graham crackers is always great. Just finely dice two apples and a quart of strawberries, then mash a pint of raspberries and a can of mandarin oranges, mix together...bam! A delicious, nutritious side dish!

Fruit breads are always nice, and fruit salads. Also, there's a nice veggie and cream cheese "pizza" that is easy to make: just use puff pastry or crescent roll dough and spread it in a baking dish to prebake (according to the package directions). When it's cooled, spread softened cream cheese over the crust, then add any combination of chopped red, orange, and yellow bell peppers, cucumbers, scallions, and shredded carrots. Season with sea salt and maybe some black pepper, then cut into finger-friendly squares.

I've been to several brunches where french toast caseroles were served. Very yummy and you bake them. They can be prepared beforehand and thrown in the oven.

Do you have a waffle maker? I always love to make those and cook down fresh fruit to top it with and some whipped cream. You could also just leave the fruit whole. Good Luck

This recipe is a hit and you can make it the night before!! You need a pack of tortillas (flour), a block of lite cream cheese, a 2 or 3 cup bag of shredded mexican cheese, a jar of jalapenos, and one or two green onions. Put the creamcheese, shredded cheese, and chopped green onions in a food processor and blend. Then add about three or four jalapenos and blend again. Blend until a peanut butter consistency, you may need to add alittle bit of water or you can use some jalapeno juice, depending on how spicy you want to make these. When finished, lay a tortilla out and spread the paste on stopping one inch from the edges. Then roll and cut in three or four. Then you can just store in a tupperware in the fridge until you need them. Also if you want a yummy dip for them you just need your favorite salsa and some bean dip (the desert xxx bean dip is great) and just mix equal parts of the two together. Enjoy!

I just had my son's baptism on Sunday and we had a brunch so I feel your pain on thinking of ideas. Now I had about 40 people, so we had to have a bit more varity. We had 3 different kinds of quiches, sausage & gravy and biscuits, fresh fruit, muffins and dounuts, little boxed cereals for the kids, sausage links, etc. I hope this helps and good luck!!

Pigs in a blanket....

Take smokey links and wrap them in cresent rolls...nice easy finger food.

Just follow baking directions on package.

Also there is an egg casserole that i have made for church..

Use eggs, hashbrowns, bacon, sausage, onions, cheese or what ever yoy may want to put into an omlet. Mix everything together...pour into a glass baking dish and bake in oven on four hundred degress until cooked

Hi.. Our family loves monkey bread with our quiche.. Its fun and sweet.. I have tried the ones in the freezer section and they aren't as good as from scratch but its real easy to make and your kids can help you make it too.. I dont have the recipe but all it is.. is cut-up refrigerated dinner rolls with some butter and cinnamin sugar and in a bunt pan.. There might be a few other ingredients too but I'm sure you can look it up online.. But we love it and its fun to make too..Good luck...
