Breakfast:
yogurt or go-gurt tubes for the kids
fruit
bagel
break an egg into a cereal bowl, whip it up with a fork, add some pepper & a little salt if desired, or I like Tastefully Simple's "Bacon Bacon" seasoning (it's soy, but yummy w/onion & seasonings in it, too). Microwave for 60-90 seconds, then microwave a tortilla for 10 seconds. Put a slice of cheese on the egg when it's waiting for the tortilla to warm... wrap the egg into the tortilla
Egg like this is also great on a bagel, but that's a lot of bread.
Hard boiled eggs great on a slice of buttered toast
Lunch:
any of the above, plus
grilled cheese, especially with fresh tomatoes coming soon... yum!
when tomatoes are in season, you can slice one with some fresh mozzarella cheese & drizzle w/TS Balsamic & Basil Dipping Oil
that oil's fabulous on any grilled or roasted veggies, too. Cook lots, and enjoy the leftovers either warm or cold on a crusty roll with a slice of provalone, or make a grilled sandwich with them, like a panini.
that oil's also great to sautee your shrimp, or chicken when you're making stir fry.
But I digress... that's more "dinner fare" than lunch!
Oh, one more awesome breakfast idea, also TS.
Use the Bountiful Beer Bread mix, prepare as directed using a beer or a Sprite.
"scramble" 8 eggs or eggbeaters in the microwave.
Thaw some Morningstar "sausage" patties, and either break them up with your fingers or cut into pieces.
Mix the scrambled eggs, "sausage" and pepper into the Bountiful Beer Bread batter. Spoon into muffin tins & bake. When done & cooled, pop into a ziplock & freeze. Take out & microwave/thaw & heat & eat. YUM. These are a family favorite. In fact, my husband works late 3 nites a week, so will pop one in the microwave when he gets home from work at nite!!

There are thousands of free recipes online to download, and there's a great search feature, for example, you can type in "eggs" and highlight "spinach & herb Mix" to see all the recipes for using eggs with that seasoning. You can narrow the search further by highlighting the meal you're interested in, in your case lunch or breakfast.
