Bread & Salad Recipes

Hi Moms - I'm looking for a new bread recipe to serve with spaghetti for 13 people. I don't want to make one from scratch; I'd rather just use a french bread (or any kind of bread) and embellish it. I have a good recipe for butter, cheese & poppy seeds but wanted something different. Any ideas?

And, while we're talking about spaghetti dinners, I want to make a spinach & strawberry salad, and have found several online, but wanted to see if you have one that you know is good (like adding almonds, avocados etc. and what kind of dressing)?

TIA!

I have a spinach and strawberry salad recipe but I serve mine more as a meal...but you could tweak it...

Baby spinach (or any other green you like, I have used them all)
Sliced Strawberries
Candied Walnuts
Cranberries/Craisins
Crumbled feta (optional)
Diced cooked chicken (optional)
Raspberry poppy vinaigrette-Any that looks good!

Easy and delicious!

I also have a Spinach and apple salad you could add strawberries too!

Baby spinach
2-3 Sliced Golden delicious apples
Red onion sliced thin

Vinegrette:
Dijon mustard 2-4 tsp
Honey 1-2 tbls
salt and pepper
Oil
Apple Cider vinegar2-4 tbls.
I just add all ingredients in a jar and shake and add in lil' by lil' till it tastes good!

Easy and delicious!

I sometimes saute fresh chopped garlic with butter and then spread it on store bought fresh french bread. Let it toast up to a light brown. Pull it out and add the grated combo cheese that has parmesan, romano, and asiago. Load it up as thick as you want it. Sprinkle with parsley and put back under the broiler until the cheese is melted and slightly browned. It's really yummy.

For the salad, I think slivered/sliced almonds and maybe some feta or similar cheese would be good with it. I would try a balsamic or a raspberry vinegarette with it. I'm not sure about the avocado with the strawberry. I love both but have never tried them together.

For spaghetti I would always say go with garlic bread and you can always add parmesan or other cheeses - if not you could serve a good crusty rustic type bread with some olive oil and balsamic vinegar for dipping (you can add a little garlic too)

For the salad baby spinach leaves and strawberries go really well together with an orange vinaigrette (orange juice, balsamic, olive oil - and then you can add whatever you want really). I would add sliced almonds or candied pecans and if you want to some crumbled blue cheese or feta - I would keep it simple and not get too fancy...

Sounds delish!

Spinach and strawberry salad:
baby spinach
sliced strawberrys
I like walnuts with spinach
feta is great

dressing: (13 people)
a few big spoons of raspberry or strawberry jam
walnut oil (or other lite oil, olive will work too)
basalmic vinegar
red or white wine vinegar to taste- to cut the sweetness (or lemon juice)
tarragon - a few shakes of dried or chopped fresh
salt and pepper to taste

Put this in a jar and shake, taste, adjust as needed.

Dressings made from jam are always a bit hit at my house. I usually only make for 2-3 people,so then I use one teaspoon of jam and adjust other ingredients accordingly.

Make garlic bread with rosemary oil instead of butter. Just saute some fresh chopped rosemary in extra virgin olive oil. Stir in some minced garlic. Dip the bread in the oil and toast oil side up until golden. Yummy, dairy free and practically healthy!
