I third the lasagna. I've been vegetarian fir almost 20 years and a veg lasagna never fails to impress/ satisfy my taste buds.

I am having a few friends over for dinner this weekend. Two of them don't eat meat other than seafood and I don't eat seafood, so it looks like I will be making a vegetarian option. Anyone have any good menu suggestions? I'm looking for something that isn't too hard to cook, but will be a crowd pleaser.

Thanks everyone! I'm checking out some different vegetarian lasagnas now, and I love the eggplant idea too. Krista thanks for the feedback on the artichoke spinach lasagna. That is one of the recipes I have pulled up on my computer right now!

Vegetarian Lasagna is always delicious.
Add a good salad, and garlic bread, olives, and steamed veggies as sides and good to go :)
I love to make Thai steak salad for a special dinner. You can leave the steak off. Basically its a salad with cooked asian noodles, sweat chill dressing, mung bean sprouts, mango, tomato, basil, cilantro, mint, and chopped peanuts. We BBQ a few new york steaks for the meat eaters. If I'm really in the mood I also make a Tom Kai Gai soup with no chicken.
Assemble your own individual sized pizzas on the BBQ (sorry I"m from CA, we BBQ year round, save that one for summer)
if its low key I do assemble your own mexican (burritos, fish tacos, or taco salad). You can use the morning star vegetarian burger crumbles.
Eggplant parmesan....with spaghetti noodles with like a garlic butter sauce....I just had this out at a nice restaurant and it was fantastic!!! I am hungry for it just thinking about it.

Make a veggie lasagna or something. Grilled/sauteed shrimp is easy, cheap and yummy. Put a little olive oil, butter and garlic in a pan, and saute the shrimp in it. Give them each a lemon wedge, or mix lemon in a bit of melted butter for a little dip. Even if you don't eat it, I'm sure the friends would love it, maybe you will too!
Make garlic bread, steamed veggies, a nice salad (avoiding iceberg lettuce) with sliced onions, tomatoes, olives, Parmesan cheese and ceaser dressing, and the veggie lasagna or shrimp.
Fettuccine with pesto. Salad. Bread. Sauteed snap peas or some other green vegetable. Fruit and cheese plate for dessert.
What about 2 kinds of fancy enchiladas. One could be chicken or pork based and one could be zucchini and mushroom and peppers (not hot peppers, but maybe poblano). You could put in brown rice or black beans and have one have green sauce and the other red sauce. Then you could have sides of mexican rice, a salad with arugula, tomatoes, cilantro and jicama, and a corn casserole (also vegetarian).
We just had the same predicament! Artichoke-spinach lasagna from allrecipes.com is perfect! Even the mean-eaters, myself included, love it. Include a nice Caesar salad and some garlic break and voila!

Granted, it is a little time-consuming, but no harder than your average lasagna. And read the reviews, you will definitely want to cut down on the broth. Bon appetit!
