OK...I know this is a late response but here is a recipe that my M. uses that came from an OLD cookbook that was my grandmother's. It is really the best "Naner Puddin'" you will ever have:
MaMaw's Naner Puddin'
3 tbls flour
6 tbls water
dash of salt
1 cup sugar
Make a paste with the above ingredients.
4 cups whole milk or half & half (I prefer the half&half)
4 egg yolks (yep, its rich)
Mix dairy and yolks together.
Combine the sugar paste and the egg mixture in a medium sauce pan and CONTINUALLY STIR at med-high heat until it comes to a boil. It MUST come to a boil or it will not set correctly.
When mixture comes to a boil, take it off the heat and add the following:
1 stick butter (I cut the stick into pieces so that it melts faster)
1 tsp good vanilla extract
Stir together until butter is melted and everything is blended well.
In a casserole dish (or whatever dish you want to use) layer sliced bananas, wafers and pudding mixture until you use about 5-6 bananas and about 1 1/2 boxes of wafers. End with a pretty layer of wafers and fresh, homemade whipped cream (optional)
Whipped Cream:
Pour 1 carton of fresh whipping cream into a mixer bowl (now, when I say fresh whipping cream, I do not mean the tub of the premade slop...fresh whipping cream comes in a milk carton in the dairy case)
Add a pinch of sugar and a little vanilla to taste (its not an exact science) and whip away using the whisk attachment of your stand mixer. You'll know its ready when it looks like...well, whipped cream!
