This is Thanksgiving weekend in Canada, and I am making a pumpkin cheesecake. I have made several different types in the past, never a pumkpin one though. I looked up a recipe and it says to bake in the oven for 50-60 minutes. Have you ever baked a cheesecake in the oven? I always made them and chilled in the fridge... The picture looks yummy but I am not so sure...

What can I do next?

So What Happened?

Thanks for all the great responses. I baked it in the oven using a water bath and the cheesecake was yummy! I will do that everytime now.

Phila Cream Cheese had a recipe for a layered pumpkin cheesecake that you bake and it's really, really easy, and delicious! And no water bath or anything like that needed.

Um, I'm not sure where else I would bake a cheesecake. Do you have a special kind of thing to bake stuff in? Or do you mean the JELLO ones that are not real cheesecake?

I love making cheesecake because it is so easy and much cheaper than buying one. Just follow the directions as precisely as possible and it should turn out fine. Sounds rather yummy, but my husband doesn't like pumpkin. :) It is easy to slightly overdo one, so as Julie B mentions watch it closely at the end, but we've even eaten slightly overdone cheesecakes and they are still great. Make sure you use a springform pan if it calls for one.

I've never even heard of a water bath for a cake. I'll have to look that up. Is that just if you do not use a springform pan?

I made Paula Dean's pumpkin cheesecake last year and it was awesome, highly recommend her recipe. I believe the recipe doesn't say to use a water bath, but I did anyways and it was perfect.

Yep -that's the way traditional cheesecake recipes are made. "Real" cheesecakes are baked in the oven until just done. I've baked a number of them -regular ones, chocolate ones and even a pumpkin one! Go ahead -it's going to be really yummy! Just watch it very carefully toward the end of the baking time, because you want it to be "just" ever-so-slightly browned, but not overdone.

I always double wrap my spring form with aluminum foil and bake the cake in a water bath. Always comes out great that way.

Dear S.:
I have always baked my cheesecakes, and I have made many different kinds of cheesecakes. One of them was a pumpkin cheesecake, but it was not my favorite. I obtained the cheesecake recipe book from Kraft, many years ago.
When you bake cheesecakes, you must not take them out of the oven after the cooking time, otherwise, they will fall. You must turn off the oven, leave the oven door ajar and leave in the oven for about 1/2 hour.
I have enjoyed baking my cheesecakes, eating my cheesecakes and serving my cheesecakes, with many compliments. The recipe on the back of the Graham Cracker Crumb box always gets a lot of compliments.
I hope this is helpful. ENJOY!!!

Yup. Matter of fact, I have one cooling right now!
I use the recipe on the back of the Keebler Graham Cracker Crumbs box. It calls for it to be baked for an hour and 15 minutes.

Yes, I bake my aunt's cheesecake and it is phenomenal. I usually bake it in oven in a water bath (place foil around the bottom of your springform pan, place the foil covered pan in a baking pan and add about an inch or 2 of boiling water to the baking pan) This avoids the cheesecake cracking. I bake my cheesecake for about 40 min to an hour and then turn off the oven, open the oven door and leave it in there for another hour to cool.
Good luck, it sounds yummy.
