What types of cookies/candies freeze well? I want to make tins of goodies for family and friends and I need my cooking day to be about a week before I delivery them... I am usually able to do it later in December and deliver the same weekend. I want to do lots of cookies, peanut butter, sugar, no-bake, gingerbread. And also do some buckeyes, and some mint chocolate bars. Will all of these things survive a week in the freezer?

Most commercial bakeries bake and freeze a lot of their stock. Then they just take it out of the freezer, tag it, and shelve it.

As long as it is properly sealed, many baked goods can freeze very well. Cake decorators always freeze their cakes prior to icing (it make decorating easier)...and since cookies are just little baby cakes, they'll be just fine!

Baked goods do fantastic in the freezer as long as you seal them well. Everything you've mentioned should do just fine.

Okay, I am going to give you this amazing little secret called microwave fudge...

One 12 oz. bag chocolate chips (you can use white as well)
1 box powdered sugar
1 stick butter
1-2 tablespoons milk or half and half
1 tsp. vanilla
nuts optional (1 cup)
In microwave, melt butter& chocolate chips (time depends on your microwave, just watch and stir and you will know how long for the next batch)
in mixer, on low, add powdered sugar & vanilla, add just enough milk to make the fudge thicker than frosting and then add nuts if desired.
Spray a pan and refrigerate till firm...
Place parchment paper in tins and wahlah... I get more compliments on this fudge than any I have made... each year I need to try a few batches before I get into the swing of things, making it the right consistencey but it freezes well and thanks for the idea... I think that I will start freezing early as well since I make about 10 pounds as gifts... usually all in one or two days... freezing is an amazing idea!!!!

Most cookies and baked goods freeze well as long as you pack them right. Let them cool before wrapping them up (individually wrapping each one keeps them at their best) and putting them in a container or bag in the freezer. I don't know about the no-bake cookies, but all the others should freeze well.

Two cookies that I think are even better from the freezer than just regular are chocolate chip (the classic Nestle recipe) and ginger snaps.
