Advice for Seling Food on a Festival?

A good friend of mine is going to sell tacos, burritos, and churros in a festival. The poor men has never do this before, lol.
Any ( really any) advice for this is apreciated.

So What Happened?

Thanks, he already got his legal paperwork and he got a food truck (don't know the right name for those)...I think that is all he has got.

Depending on the festival, he might need a permit from the festival organizers, and also a permit from the county department of health. He also may need to be inspected prior to opening his stand. (At our local July 4th festival, the inspector shows up at a given time and inspects everybody before allowing the food area to open.

He will need enclosed containers for food items (i.e. rubbermaid bins) soap, plastic gloves, buckets for holding water to clean things, extension cords, plastic racks to keep things off the ground and thermometers to make sure the food is cooked to the proper temperature and the things on ice are cold enough...... and then all the things Nicole mentioned.

Honestly, if he has never cooked/sold food professionally before, he needs to take a class on food safety and needs to do something to prepare esp if he has not worked in cooking/food service before. This is a bigger issue than for a parenting site. Someone starting his own business needs to do a lot of research and preparation.

Make sure they have appropriate permits so they don't get kicked out. My friends and I walked up to a festival and tried selling cold sodas to the poor hot masses standing in line for tickets. We got chased off and threatened with a fine.

Pack lots of supplies like tin foil, paper plates, napkins and other things you need to transfer the food to the customer. Whatever you choose to serve it up on, make sure you have plenty.

Don't forget to stock up on change. Go to the bank and buy a bunch of ones, fives, tens and many quarters nickels dimes and pennies. Nothing worse than opening up your shop and having the first customer buy a three buck item with a fifty and you run out of change an hour into the day.

Festivals are normally pretty hot. Bring an ice chest filled with ice and bottled water for yourself to help keep cool. Portable fans are awesome. Nothing grosser than buying food from a dude dripping with sweat.

That's all I can think of at the top of my head...

I have sold cupcakes at a local festival. He will definitely need to take the food handlers test. Also, he may have to get a permit. Only 1 person has to have it, but they have to be present at all times. Similar to how every manager at a restaurant has to be certified.
