I always eat oysters raw or whole (grilled, or steamed open in white wine, with sorrel sauce & bacon). But...
- po boys
- pasta
- ciopinno
- pâté
- seafood pies /
- breaded and fried
I am looking for recipes, creative ideas, etc, for using oysters. I am not looking for fancy Oysters Rockefeller, or even ways to use fresh raw oysters like in a fancy restaurant or with cocktails. What I am seeking is ways to use chopped oysters in family-friendly dishes. I know about gumbo, and chowder, so those are covered already. And it doesn't seem like the right season for a roast turkey with oyster stuffing.
Do any of you have any ideas? I don't mind if the oysters are disguised. They just need to be included, not featured. Thank you! Oh, and there are no allergies or dietary restrictions to consider.
Thank you for the suggestions!

There are never any left over once I am done shucking (done with friends). If there were, I would just grill them. Po boys are good, but I always have to go out for them (because we ate the oysters raw, see above).
Once you chop them up, it all falls apart.
Personally, I like to keep the oysters whole.
On a half shell, or in Hawaii, whole shelled raw oysters are marinated in a sauce, then eaten.
To disguise oysters, makes it moot in the dish.
To me.
Here is a good recipe from a local Hawaiian Chef:

Another one (it is for a Hawaiian "Poke" sauce recipe):
http://www.aloha-hawaii.com/hawaii/poke/
the "Poke" (pronounced as "po-kay") is a sauce that can be used with any raw seafood.
It is a feature, not a background.

I would think that this recipe could easily be adapted for oysters!
I've never cooked anything at all with oysters myself, but I stuck it into a search on allreceipes.com & came up with a few:
Grilled Oysters with Fennel Butter (sounds delish)

There were about 200 recipes involving oysters in one way or another & that's just 1 website!
