I'm planning a fiesta for my 3 year old little girl. I am wondering what to serve...I figured chips and queso...maybe miniture tostadas. What do you think? Also, ideas for a cute cake. The plates and napkins have sombraros, maracas and chili peppers on them. Just give me any ideas you may have for a little fiesta! Thanks so much! I'm counting on all you crafty mom's, I know you're out there!;)

I saw a ton of cute fiesta decorations and plates and such at Garden Ridge as well as pinatas. Good luck! Sounds fun!
have you thought about getting a pinata? They have some cute one's up at party city. And all kids love quesadillas too -- cheese and chicken and cheese and some kids might even like the enchilidas too - but that can be kinda messy, I guess - -I gues you want more finger type of foods. And, lastly, try decorating in lots of primary colors, red, orange. You might even want to visit your local mexican restaurant for ideas on decorating.
And for a cake - how about getting someone to make a cake that looks like a sunbrao (sp?)

I agree with the taquitos idea. They are yummy and so simple. Plus, you can cut them in half to make them smaller for the kids. What about Quesadillas, too? They are so easy to make, even if you want the chicken ones- just add the pre-cooked chicken cubes. (I think Tyson makes them.) For a healthy "dip", you could try some plain or vanilla yogurt with sprinkles (yep, just like the ones for cupcakes) in little disposable cups.
For the cake, I was going to say a sombrero, too. lol If you are making it, it would be pretty simple, using a large pan and a small one (just stack them for the "hat".) Then, just frost it, and add Fruit Roll-up "bands" on the sides of the "hat"...or even make zig-zags out of the Roll-ups.
I would also recommend the pinata. They are so much fun, and kids LOVE the treats! lol Anyway, best wishes to you! :)
Cheese quesadillas would be a great item also. There is a GREAT bakery in Burleson that I use every time a need a cake - Sweet Imaginations - They are fabulous! Every year I take my sons invitation and they match it PERFECTLY to the cake! They also do smash cakes to match if you want one. They are the absolute best and so sweet! They have done kids birthday cakes, adult birthday cakes, bunko cakes, retirement cakes, baptism cakes, etc. for me and they are GORGEOUS, but more importantly DELICIOUS! They are right off of Wilshire.

some taquitos,you can find the taquitos in the frozen section in walmart they are $10 for 60 taquitos i don't remember the name but are delicious, with guacamole and sour cream
some pork tamales or beef tamales
heres two recipes for guacamole
TACO GUACAMOLE
guacamole makes this dip taste just like tacos
2 ripe avocado
juice of 1 lime
1/4 cup onion finely chopped
1/2 teaspoon cumin
1/2 teaspoon chile powder
1 clove of garlic, peeled and finely chopped
1 tomato, seeded and diced
1 cup shredded lettuce (optional for garnish)
1/4 cup shredded cheese (optional for garnish)
With a fork or a food processor, mash together the avocado and lime juice. Fold in the remaining ingredients. Spread out the lettuce on a plate. Scoop the guacamole into the center and top with shredded cheese.
CREAMY GUACAMOLE
3 ripe avocados
1/4 cup heavy cream or evaporated milk
1/2 teaspoon salt
1/4 cup crema
1 jalapeno coarsely chopped (optional for flavor and heat)
juice of one lime
Place all ingredients in food processor and pulse until smooth. Use immediatley
