My son's 1st birthday is coming up and I'm looking to make him a cake that doesn't use eggs. I haven't introduced egg whites to him yet but I have introduced dairy. Can anyone share a good recipe that they've tried that's good? I'm hoping to be able to make one cake, if not that's ok too!

So What Happened?

I ended up making Kate H's Recommendation, Applesauce Spice Cake from Martha Stewart: http://www.recipezaar.com/Babys-First-Applesauce-Cake-and.... Thank you Kate! It was the easiest cake to make. And, most importantly, everyone loved it! They were shocked at how good it was. There was no more cake at the end of the party! Most everyone had seconds. This is a good treat whether it's your son's 1st birthday or not. Thanks for all the suggestions! Everybody's help made the decision SO much easier for me.

this is what i used for my son's first birthday...definitely not as good as a cake with eggs and wheat, but not bad. I also have a couple of other egg free recipes up on my blog if you're interested!

Hey, The one that I have tried has been "Apple Sauce" 2tbs. = 1 egg it acts as a binder and keep the cake moist too. There are others but I have not tired them myself but 1egg = 2 heaped tbsp. potato starch or arrowroot powder. 1 egg = 1 heaped tablespoon of soya powder or 1/4 cup of tofu. I hope this helps you in making the cake! Oh yeah and Happy Birthday to your little one!

You can substitute 1/4 cup of silken tofu per egg. I use this in brownie mix and it's deleicious!

No need to get a different recipe; just get egg replacer from your local health food store & follow directions. Works great!
I've also seen recipes where you can use apple sauce in place of eggs!

It's pretty widely available now -- I got it in the natural foods section of our local Stop & Shop. Usually I bake birthday cakes from scratch, but I decided this was a better option for my son's 1st birthday since he hadn't had eggs yet either. I think I used 2 boxes of (yellow) mix for a 3-layer cake, and I made my own buttercream or cream cheese frosting (can't remember which I did, but neither has eggs). My son loves berries, so I sliced up all kinds of berries and put them with the frosting in between each layer and to decorate the outside. It turned out great! (though my son was more interested in the berries than the cake ;) ) Hope this helps, and happy birthday!

Are you worried about an egg allergy? At 1 year they can have egg and honestly, cake has very little egg in it anyway. I understand your caution, but you probably don't need to worry about it.

I wanted a semi-healthy cake for my kids' bday as well as no eggs, so I used a recipe from Martha Stewart. It was an apple spice cake with apricots and cream cheese frosting. YUM!

My son loves bananas and you can use them to replace eggs in baking. I think I'm going to make him a banana cake for his birthday.

We decided no sugar for our boy. Haven't regretted it since. We have to grit our teeth when it comes to parents and OUR siblings making comments about 'deprivation' and 'I'm gonna tell him when he's older he didn't even get to eat his own cake'. He didn't miss it.

Having a separate treat or cake is not a bad idea, especially if allergies are an issue.

We made a waffle and plastered it with his favorite cheese spread (goat cheese) and he adored it! We also have had pancakes, too.

If you would like an eggless recipe for pancakes (my son loves them, and they were sugar-free, but you can add bananas and it adds a little sweetness) email me.

PS: I think the sugar-free has led to a calmer boy overall. He's still very active, but he's not 'out there' on a sugar high.

Carrot Walnut Date Cake

Ingredients:
1 cup finely grated carrots
1/2 cup chopped walnuts
1/2 cup chopped pitted dates
1 cup boiling water
1 1/2 cup whole wheat flour
1/2 cup butter (1/2 stick)
1 fist cream of wheat
3/4 cup sugar
1/2 teaspoon nutmeg powder
1 teaspoon baking powder
1/2 teaspoon sodium bicarbonate
1/2 teaspoon salt
1 teaspoon all vanilla essence

Method:
Pre-heat oven to 350 degrees F. In a big bowl, combine carrots, sugar and butter. Pour the boiling water to this. In another bowl, mix all the other ingredients. Add this to the carrot mixture & blend well. Pour this to a greased 9" round cake pan. Bake for 40 to 44 minutes. Bake till a toothpick inserted in the center of the cake comes out clean. Turn off the oven. Let it cool for 4-5 hours. Invert the pan cut into pieces.

I have a few friends whose kids have an egg allergy. So I buy Pillsbury cake mix (no cross contamination with nuts) and I substitute the egg with applesauce. It taste yummy. The only negative is it does fall apart. so it's easier to make cupcakes instead of regular cake. When you bake it as a cake it takes a lot longer to cook. I would use 2 teaspoons per egg, i have used 2 tablespoons per egg and it gets crumbly.

The applesauce way is the best. My friend uses 1 can of cream soda with a yellow cake, (no other ingredients) blends those 2 and the cake is good. Except, the cake has caffine and a bit of a soda taste.

Unless he is alerigic or your Dr. said not to. I would serve him a nice cake made with eggs. Everything theses days has eggs as in them. Maybe you just do not notice. This is the same with peanuts. If giving him eggs really concerns you, I think Angel Food cake is made with the whites only. Happy 1st birthday, I hope he makes a big mess for you!

Hi! You can make a great cake w/pumpkin puree.! can pumpkin and one box of cake mix. I usually make it w/a box of spice cake mix, but Choc. or Devils food is also really good. I don't see why you couldn't use any flavor. Also, you can use 1 can of soda and 1 box of cake mix. Use light soda like sprite or 7up for most kinds. I'm told cola works best for choc., but I have never done that one. Good luck.

Hi V.!
My son just celebrated his 1st and I was looking for the same thing. I found a cake mix by Cherrybrook Kitchen (should be sold in your local supermarket) that is all natural, dairy free, egg free, gluten free & peanut/nut free - but actually tastes great (they have chocolate and yellow cake mixes). They also do brownies, frostings and cookies. Ok, weird, I sound like a commercial. Anyway, we loved it and so did our babe.
