18 Month Old Changing Eating Habits

My almost 18 month olds eating habits have suddlenly changed. She will only eat what she can feed herself, which is great. But I would like some healthy ideas on what I can give her that is not too messy. She isnt too picky it just has to be done by her. So any recipes you may have would be great! thanks

Deceptively Delicious by Jessica Seignfeild. ( sorry about the spelling) My 15 month old does the same thing. We basically feed him, pancakes with sweet potatoes, wheat bread french toast, turkey hot dogs cut lenght wise and then choped up so he cant choak, he will still let us feed him yougart which he loves, he will eat fried okrah(sp?). He will eat anything at Daycare at home its a different story. Cereal bars with fruit filling. The above book has lots of tricks like chicken nuggets with veggatable puree added, grill cheese sandwich with butternut squash puree, even deserts with veggies added. Have you ever had zuchinni bread its wonderful and moist, you would never know you were eating a veggie. Good luck. I am intreasted in what other moms have.

For my 18 month old, I keep the fridge stocked with: zucchini and squash chunks, asparagus, mushrooms, sweet potatoes, whole wheat pasta, chicken breast, hard-boiled eggs. I have everything cooked so it's easy to just microwave for a few seconds at mealtime. I hide the meat in the pasta and melt shredded cheese on it. Another favorite is baby pizza - half whole wheat english muffin with spaghetti sauce, chicken or ground beef, some leftover veggie, and cheese toasted in the toaster oven for 2 1/2 minutes. I love the muffin idea - will have to try that.

For lunches try cheese cubes cut in half, lunch meat rolled into tubes or wrapped with tortilla, spiral pasta and edamame!

Well cooked veggie chunks or chunks of salmon or chicken are easy. Also, cheese, avocado, wheat toast, brown rice...
I like to make whole wheat muffins and add zuchinni, apple and carrot. My daughter loves them! You can also do this with whole wheat pancake mix. Just shred the fruits/ veggies, saute them in a little butter, applejuice and honey, and add them. Here's a recipe for the muffins.

1 cup rolled oats
1 cup buttermilk
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup brown sugar or honey
1/2 cup applesauce
1 tbs oil
1 egg
1 teaspoon cinnamon
Shredded zuchinni, carrots and apple.
Small ammt. of apple juice, butter and honey.

DIRECTIONS
Place oats in a small bowl, pour in buttermilk. Let sit for two hours at room temperature.
Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
Grate fruits and veggies and put them over medium heat in a pan with sufficient butter, applejuice and honey for cooking and flavoring.
In a large bowl, stir together whole wheat flour, baking powder, baking soda and brown sugar. Stir in oat/buttermilk mixture, applesauce grated frits and veggies and egg; mix well. Pour batter into prepared muffin cups.
Bake in preheated oven for 25 minutes, until a toothpick inserted into center of muffin comes out clean. Wait until they cool to try to remove them. Because of all the fruit/veggie, they will be quite soft until cooled.

My son is doing the exact same thing! How funny! He won't let me spoon feed him really anymore. Only his cereal for breakfast, but all other meals he pushes a fork away. I just thought it was funny that it is a common thing. Good to know & I'll be watching out for responses.

Almost anything that you eat can be given to her. Veg., can be blanched, meat cut and cooled,cheese sticks or cubes crackers.
